Vegan Overnight Oats

This time of year, when it’s dark and chilly out in the morning, I always wake up craving something warm and filling for breakfast. However, I don’t have a ton of time scheduled into my typical morning routine for breakfast, which is why I love making overnight oats.

With just a little effort the night before, I can have a warm and satisfying breakfast every morning. The best part is that these vegan overnight oats are packed full of super foods and nutrients that will power me through my day. 

Of course, this recipe can be eaten cold as well, but I always find myself craving warm foods when the weather cools down so I love heating up the oats a bit before serving.

Vegan Overnight Oats

Ingredients

  • ½ cup oats
  • ½ cup almond milk
  • 2 tbsp. chia seeds
  • 2 tbsp. almond butter
  • 1 tsp. honey
  • ½ banana, sliced thin
  • Cinnamon

Instructions

  1. In a bowl, combine the oats, almond milk, and chia seeds and then refrigerate overnight.
  2. In the morning, transfer the oats to a saucepan and warm over medium heat for two or three minutes.
  3. Pour into a bowl and stir in the almond butter, then top with honey, banana, and a sprinkle of cinnamon.
