A Mouthwatering Dish for Your Fourth of July Festivities

We hope everyone is looking forward to a healthy, happy, and relaxing Fourth of July weekend! In honor of the holiday and in celebration of barbeques and picnics everywhere, we’d like to offer a recipe from our very own Coach Julia.

This is a perfect dish to take to a party – a refreshing, sweet salad with a little kick of spice form the jalapeno. Check out Julia’s full post about the recipe on her website, Lemons and Loafers, and have an amazing holiday!

Watermelon, Feta, and Tomato Salad

Ingredients:

  • 6 cups watermelon, cubed
  • 2 cups cherry or grape tomatoes, cut in half
  • 1 cup feta cheese, cubed
  • 1 jalapeno pepper, minced
  • 1/2 cup basil pesto
  • salt and olive oil to taste

Directions:
Mix watermelon, tomato, feta, pesto, and jalapeno in a large bowl
- Stir in olive oil and salt, tasting until it’s right

Note: make this as close to party time as possible because it begins to go seriously downhill after about 2 hours of sitting in its juices
