Delicious Salad & Dessert Recipes for a Festive, Healthy Christmas

Merry Christmas! It’s that time of year for spreading joy and cheer and what better way to do that than by making a healthy, and delicious, holiday meal? Today we’re sharing with you two of our favorite Christmas recipes that are sure to satisfy your family and guests. Bonus: they’re healthy, too!

Warm Maple Spinach & Endive Salad
with Pomegranates, Pecans and Maple Vinaigrette

Ingredients

1 12 oz bag of organic spinach
2 heads Belgian endive, halved, cored and sliced
½ cup pomegranate seeds
½ cup of pecans, chopped

Maple Vinaigrette

2 tbsp maple syrup 
2 tbsp red wine vinegar/apple cider vinegar 
2 tbsp organic cold pressed olive oil 
Pinch salt/pepper

Instructions

  1. Toast pecans in a dry skillet over low heat, stirring often, 2 to 3 minutes. Transfer to small bowl and let cool.
  2. Toss spinach, Belgian endive and pomegranates in a large bowl.
  3. Heat oil in a small skillet over medium-low heat. Add vinegar and maple syrup and bring to a boil. Season with salt and pepper.
  4. Pour dressing over salad and toss with toasted pecans.

Cashew Cake Batter Pudding
Raw, Vegan and Sugar-Free!

Ingredients

1 heaping cup raw cashews, soaked for one hour and drained
1 cup pure water (or unsweetened almond milk or coconut water)
1 tsp vanilla extract or vanilla bean
3 tbsp coconut butter (in the baking aisle of health food stores)
½ tsp dark-liquid stevia
½ tsp sea salt

Instructions

Blend all ingredients together in a food processor. Refrigerate and serve cool. For added pleasure, combine carob or chocolate chips before refrigerating or drizzle with acai chocolate sauce.
