Today is National Vanilla Pudding Day! Though this isn’t a holiday that most health-minded folks would think to fete, today is the perfect excuse to indulge your sweet tooth and enjoy the decadent taste of a (healthy!) vanilla pudding. Rich without being heavy, vanilla pudding might just be one of the most comforting desserts around.

Yet traditional vanilla pudding, full of refined sugar and butter, is hardly a healthy choice and poses particular challenges for those who eschew dairy. That doesn’t mean you have to forego the pleasures of vanilla pudding, though. Try a vegan and sugar-free vanilla pudding recipe instead. The scent of vanilla has powerful anti-anxiety properties, and vanilla extract is a natural antioxidant, helping the body rid itself of free radicals that can make it more susceptible to disease. So get out your saucepans and prepare for dessert!

Ingredients

4 cups coconut milk or almond milk

2/3 cup organic cornstarch

1/4 cup maple syrup

1/2 teaspoon salt

2 tablespoons vanilla extract

Instructions

1. Add the coconut or almond milk to a saucepan, along with the cornstarch, maple syrup, and salt. Whisk over low to medium heat, making sure to keep out the lumps.

2. After approximately two to three minutes, the mixture should thicken. Now whisk in the vanilla extract.

3. Let the pudding cool for seven to 10 minutes, then cover and let it chill for two and a half to three hours. For a creamier finish, you can blend the pudding in a food processor after it has chilled.
